Tacos have been around for many centuries. Before the Europeans arrived in Mexico, tacos were already being devoured by those who lived in the Valley of Mexico. These early Mexicans stuffed tacos with small fish that were easily caught and mixed with an array of spices. When the Spanish conquistador Bernal Diaz del Castillo reached Mexico, he shared the native taco with his soldiers – they all enjoyed this delicious meal!

Taco Types


You can add anything to a taco shell ranging from meat to vegetables, though there are some traditional taco types that are popular throughout Mexico.
Tacos de Cabeza: this type of taco literally translates into "head taco," since it is stuffed with the insides of a cow's head. These tacos are also stuffed with beef tongue, cheek, lips, and sometimes eyes.
Tacos de Asador: "asador" means "grill" or "spit," and this is exactly how these tacos are made. Tacos de Asador can be filled with ground meat, tripe, or chorizo. Generally, an order of Tacos de Asador includes two small tacos, salsa, and guacamole.
Tacos Sudados: these tacos are also called "sweaty tacos," since they are covered with a damp cloth and allowed to "sweat." Tacos Sudados are generally filled with meat that is very spicy.

There are many other kinds of traditional tacos that are served throughout Mexico. When you use your imagination, tacos can be stuffed with nearly any kind of filling. The most important thing to remember when making a taco is that the taco shell must be fresh. Stale taco shells do not have any taste, and these won't make a great meal!
